Rohan and I have this weekend morning routine. It began when we started downloading Merlin on the Sunday morning after it had screened in the UK; Rohan would do the downloading, extracting and so forth, and I would cook him pancakes. We would eat the pancakes and then watch Merlin. Recently I discovered that buttermilk makes pancakes better, and more recently still, after much experimentation, I discovered the Perfect Pancake Formula. This is for big fluffy Pancake Parlour type pancakes, not thin crepes. It's nice and simple. I share it here .

Perfect Lazy Weekend Pancakes
(makes 4 large pancakes)

1 1/3 cup self-raising flour
1 1/3 cup buttermilk
2 eggs, beaten
A bit less than half a teaspoon of baking powder

Dump the flour and baking powder in a mixing bowl. Make a well in the centre and drop in the eggs. With a wooden spoon, begin gradually mixing the flour into the pool of eggy goo in the centre. Gradually add the buttermilk into the batter as you do this. Continue adding buttermilk and mixing in the flour till you have a smooth batter. If you've done it well, there won't be any lumps. It will probably be quite a thick batter; don't worry about that.

Heat a smallish frypan to about halfway between low and medium heat (I know, really accurate) or until you can melt some butter in it which froths without browning. Pour in a ladleful of the batter (a bit less than half a cup is what my ladle holds). Move the pan about so the batter spreads out into a flatter shape.

Let the pancake cook until the top is beginning to set around the edges and there are many bubbles formed on top. Turn the pancake and cook until it is getting golden and brown on the bottom (you'll need to slide a spatula under it to check). Put it on a plate and serve with whatever takes your fancy. We like pure maple syrup (expensive) with fruit (sliced banana for Rohan, stewed apples and pears for me).

Eat. Then have a cuppa tea and begin your day :)
